About the bake
We defy not to go banana's over this Gluten Free Banana Bread Pudding.
Not only is it suitable for coeliacs, it is the perfect gluten free bread machine recipe too.
Who knew you could whip up sweet loaves in your machine?
Method
Step 1:
Double line the bread pan with 2lb loaf tin liners
Step 2:
In a bowl cream together the butter and the sugar until it is light and fluffy. Add the beaten eggs, then the flour and baking powder a little at a time until it is all incorporated.
Step 3:
Mash the bananas until smooth and stir into the mixture with the yogurt. Add the nutmeg, sultanas, and the roasted nuts and mix until smooth.
Step 4:
Spoon the mixture into the lined bread pan and set to BAKE ONLY MENU for 1hour. Test the bread by pressing the top gently, if it springs back it is cooked. If not then it will need longer.

- 1/2 tsp Xanthum gum

- 100g Roasted Walnuts or Pecans
