About the bake
Is it a cake? Is it a biscuit? Whichever way you look at it, these things are delicious. This recipe is for a batch of wintery Whoopie Pies, ideal for the festive season.
A Whoopie Pie is an American baked treat which is made from two small round cakes sandwiched around a sweet buttercream filling. Usually a Whoopie Pie recipe contains chocolate to make the cakes but we've kept things simple with ours, using a vanilla flavoured cake. To give our Whoopie Pies a wintery look we've included steps to make a simple icing which you can decorate with whatever festive sprinkles you like.
Method
Step 1:
Heat the oven to 180°C (fan 160°C, gas mark 5). Line three baking trays with baking parchment.
Step 2:
Cream the butter and sugar until light and fluffy, beat in the egg until smooth.
Step 3:
Stir in all the flour, bicarbonate of soda, baking powder, salt, vanilla extract and milk to make a soft thick mixture.
Step 4:
Using an ice cream scoop place spoonfuls of the mix well spaced apart and bake for fifteen minutes until golden brown and just firm to the touch. Allow to cool for five minutes before moving to a tray to cool.
Step 5:
To make the filling, beat the butter, icing sugar and vanilla together until smooth, adding a drop of boiling water if necessary. Use the buttercream to sandwich the whoopies together.
Step 6:
To make the icing, mix the icing sugar with a couple of teaspoons of water to make a very thick icing and drizzle it over the whoopies.
Step 7:
Dust a work surface and thinly roll out the ready to roll icing. Use a snowflake cutter to cut out little snowflakes and place on top of the whoopies with edible silver balls

- 1 Free range medium egg
- 350g Allinson's plain white flour
- 1 tsp Bicarbonate of soda
- 1 tsp Baking powder
- 1 pinch Salt
- 1 tsp Nielsen-Massey Vanilla Extract
- 100ml Whole milk
For the Buttercream Filling
- 50g Unsalted butter (softened)
- 200g Silver Spoon Icing Sugar
- 1 tsp Nielsen-Massey Vanilla Extract
For the Icing
- 150g Silver Spoon Icing Sugar
- 2 tsp Water
- 50g White sugar paste icing
- Few Silver balls
- 150g Silver Spoon Icing Sugar
