About the bake
Rock cakes or rock buns? Whatever you choose to call these little beauties they are sure to bring back nostalgic memories of childhood baking.
As a child you may have wondered what are rock cakes made of? Well believe it or not, no actual rocks are harmed in the baking of this recipe. Just a delicious combination of currants and mixed spices.
Are rock cakes meant to be hard? Yes, that is exactly the reason for their name, due to their light and crumbly texture. We think that they are the absolute perfect accompaniment with a big cup of tea.
Method
Step 1:
Preheat the oven to 190°C (170°C fan, 375°F, gas mark 5). Grease a baking tray.
Step 2:
Sift the flour, salt and baking powder into a mixing bowl and rub in the butter until the mixture resembles breadcrumbs.
Step 3:
Stir in the sugar, fruit and spices. Beat in the egg and just enough milk to make a stiff mixture.
Step 4:
Drop tablespoons of the mixture on the baking tray and rough up each with a fork.
Step 5:
Bake for 15 to 20 minutes until cooked through. Cool on a wire rack.

- 75g Silver Spoon Caster Sugar
- 75g Currants
- 0.25 tsp Nutmeg (grated)
- 1/4 tsp Mixed spice (ground)
- 1 Egg(s) (free range) (beaten)
- 2.5 tbsp Milk (whole)
- 225g Allinson's plain white flour

Perfect rock buns recipe. I just made a batch of them and they're really good.
I love rock cakes! This is a nice recipe. I like the spice combination. I included some candied lemon peel and flaked almonds in the recipe. A sprinkling of Demerara sugar before baking added a satisfying crunch. Other times, I’ve added flaked almonds as a topping instead! ☺️
