About our Low Sugar Shortbread recipe
This is a delicious low sugar shortbread, soft, light, and perfect for a perfect for a 'not so naughty' snack. With each bite, the buttery crumbs will melt in your mouth. Truvia For Baking keeps the sweet taste we love just without the sugar.
Low sugar shortbread baking tips:
No time, no problem! This is such a quick & easy recipe. So, whether you’ve got last minute guests or just fancy something sweet to accompany your cuppa shortbread is always the answer. You can roll out the dough and cut out in whatever shape you fancy but just be aware you will need to adjust the baking time accordingly.
Planning ahead? You can make the dough and leave it in a sealed container in the fridge for up to 24 hours. Once ready pop into the oven and bake as per the method above.
Top tip! Chilling before baking ensures the dough doesn’t spread too much and holds its shape. So once you’ve made the dough and whilst washing up, pop the dough in the fridge to cool slightly pre-cooking.

Method
Step 1:
Lightly grease and base line a 18cm (7") round tin.
Step 2:
Put the butter into a large bowl along with the Truvia for Baking Caster and Vanilla Bean Paste. Beat until well combined.
Step 3:
Add the plain flour and mix again until a soft ball of crumbly dough forms.
Step 4:
Transfer the dough to the prepared tin and use the back of a spoon to press it out until the surface is even. Use a knife to mark out 8 even portions and prick with a fork.
Chill for minimum of 30 mins. Whilst the dough is chilling preheat your oven to 180°C (160°C fan).Step 5:
Once chilled put the shortbread into the pre-heated oven and bake for 25 mins or until pale golden-brown. Set aside to cool completely on a wire rack before cutting into portions and enjoying.
