About our malt loaf recipe:
Sticky, sweet and perfect with a slather of butter, our malt loaf is absolutely perfect for a tea time treat. It's also a great pre-workout snack, and can be popped into tupperware for an easy packed lunch.
Malt's known for its energising properties, and it's a source of B vitamins, including thiamine, riboflavin, niacin, and vitamin B6.
Method
Step 1:
Preheat the oven to 180°C (160°C, 350°F, gas mark 4). Grease and flour a 450g/1lb loaf tin.
Step 2:
Put the sultanas, raisins, butter and water into a pan. Bring to a boil and simmer for 5 minutes. Remove from the heat and set aside to cool a little.
Step 3:
Sift the flour, bicarbonate of soda and salt into a mixing bowl. Stir in the sugar.
Step 4:
Pour in the warm fruit mixture and add the beaten egg and malt extract. Mix well until blended.
Step 5:
Pour into the prepared tin and bake for for 35 - 45 minutes or until a skewer inserted comes out clean. Leave in the tin for 10 minutes, then turn out onto a wire rack to cool.
Step 6:
Serve sliced and spread with butter.

- 1/4 tsp Bicarbonate of soda
- 1 pinch Salt
- 110g Billington's Unrefined Dark Muscovado Sugar
- 1 Large free range eggs (beaten)
- 1 tbsp Malt extract

Great malt loaf that lasts well if you can manage not to eat it in one day 😀
We love this malt loaf. I use chopped dates, not sultanas/raisins and always double the recipe, one is not enough!! The timing is hit and miss, mine takes longer to bake because I doub it. Trial and error but always worth it.
Delicious every time I make it, I added a few tweaks for my own liking, i use chopped dates with the sultanas and 3 tablespoons of malt, it turns out decadent and perfect. ☺
