About our Easy Banana Bread recipe
If you're looking for an easy banana bread recipe then look no further. Banana loaf is such a great way of using over ripe bananas, the fruit adds moisture and sweetness to your bake. This recipe can be frozen once baked. Just slice beforehand so you can defrost a slice at a time. If love the warming undertones of spice in your loaf, try replacing a tbsp of flour for ginger. Method
Step 1:
Preheat the oven to 170'c (150'c fan).
Step 2:
Grease and line a 2lb loaf tin
Step 3:
In a large bowl or a stand mixer, cream together the butter and golden caster sugar on a high speed until light and fluffy (around 3 minutes)
Step 4:
Add the eggs one at a time, whisking together between each addition.
Step 5:
Add the bananas and vanilla extract to the bowl and combine.
Step 6:
In a separate bowl, add the self raising flour and ground cinnamon and gently stir together.
Step 7:
Add the dry ingredients to the wet a little at a time and whisk very gently on a low speed until fully combined and no lumps remain.
Step 8:
If the mixture is a little thick, add a tablespoon of milk to loosen.
Step 9:
Pour the mixture into the prepared loaf tin and top with the third banana, sliced in half lengthways to decorate.
Step 10:
Bake in the preheated oven for around 1 hour or until an inserted skewer comes out clean.
Step 11:
Once fully baked, remove from the oven and leave to cool in the tin for 5 minutes, then turn out to cool fully on a wire rack.
Step 12:
Once cooled, slice and serve.

- 175g Billington's Unrefined Golden Caster Sugar
- 1 tsp Nielsen-Massey Vanilla Extract
- 2 Eggs (large)
- 2 Bananas (mashed)
- 1 tsp Ground cinnamon
- 250g Allinson's Self Raising Flour
- 1 tbsp Milk
For the Decoration
- 1 Banana (sliced length ways)

- Skewer
- Cooling rack

Perfect result, although I did use 15g less sugar and it was more than enough with the sweetness of the bananas as well. A lovely recipe that went down well with the family!
I had cinnamon left and I thought what can I do with it then I thought of banana bread. It’s a lovely combination. It’s sweet and fluffy. Defonately recommend 5 stars
