Method
Step 1:
MIX
Mix the flour, yeast, sugar and salt in a big bowl. Mix the water and oil together, then stir in with a cutlery knife.Step 2:
KNEAD
Tip onto a lightly floured surface and knead for 10 minutes (or use the dough hook on your mixer).Step 3:
RISE
Lightly grease the mixing bowl with some oil. Put the dough back in, cover the bowl with a clean tea towel and leave to rise until doubled in size. Preheat your oven to 240'c (fan 220'c, gas mark 9).Step 4:
SHAPE Divide the dough into 4 pieces- keep others under the tea towel to stop them drying out. Roll a piece of dough to as thin as you can get it onto a lightly floured surface. Lift carefully onto a floured baking sheet or pizza stone and top with your breakfast ingredients. Bake for 10 minutes.
Step 5:
With 5 minutes left to go, open the oven and half slide the pizza out, crack an egg onto the top in the middle and close the door again. Allow the egg to cook for the last 5 minutes.

- 500g Allinson's Strong White Bread Flour
- 1 tsp Billington's Unrefined Golden Caster Sugar
- 300ml Water (warm)
- 1 Allinson's easy bake or time saver yeast
- 2 tsp Salt
- 50ml Olive oil
- 500g Allinson's Strong White Bread Flour
For the topping
- 3 tbsp Tomato purée
- 0.5 Mozzarella (ball)
- 3 Sausage(s) (squeeze the meat out and roll into tiny balls)
- 2 Black pudding (slices, chopped)
- 3 Pancetta (slices, chopped)
- 3 Mushrooms (large, sliced)
- 2 Tomato(es) (diced)
- 1 Egg(s) (free range)

This was the best idea ever! I was nursing a sore head and had some frozen pizza dough I'd made in the freezer. I topped it all with breakfast ingredients and me and my housemate ate this. Felt better by 10am (never happens).
